FROMAGO ha querido darle este a\u00f1o su primer t\u00edtulo nacional, y la respuesta ha desbordado las previsiones: la demanda oblig\u00f3 a la organizaci\u00f3n a ampliar el n\u00famero de plazas de la final, que reuni\u00f3 en <a href=\"https:\/\/fromago.info\/feria-del-queso-zamora\/\" style=\"color:#8F5C0C;font-weight:700;\">la feria del queso de Zamora<\/a> a pasteleros, cocineros y obradores de Madrid, Castilla-La Mancha, Canarias, Extremadura, Castilla y Le\u00f3n y otras comunidades. El concurso, tercero y \u00faltimo de los cert\u00e1menes nacionales de la feria, est\u00e1 organizado por <strong>EILZA<\/strong> y patrocinado por <strong>INLAC<\/strong>.<\/p>\n\n  <h2 style=\"color:#2E7D6B;font-weight:800;font-size:26px;margin:38px 0 16px;\">Una regla con acento zamorano<\/h2>\n\n  <p class=\"anim\">Las bases marcaban una condici\u00f3n que convert\u00eda cada tarta en un peque\u00f1o mapa quesero: todas deb\u00edan llevar, como m\u00ednimo, dos quesos, y uno de ellos ten\u00eda que ser <strong>Queso Zamorano con Denominaci\u00f3n de Origen<\/strong>, acompa\u00f1ado de otro procedente de la comunidad aut\u00f3noma de cada participante. La final se desarroll\u00f3 en dos fases. La primera, de precisi\u00f3n: <strong>ocho porciones iguales<\/strong>, con cortes limpios y sin desperdiciar producto, porque una buena tarta tambi\u00e9n tiene que saber servirse. Ya hab\u00eda ganado este verano el concurso a la mejor tarta de queso de la Comunidad de Madrid, pero no llegaba a Zamora como favorito: \u00abHab\u00eda mucha competencia y no me lo esperaba\u00bb, confes\u00f3, emocionado, tras recoger el Trofeo FROMAGO 2026, la medalla de oro y los 500 euros del primer premio. Y el bronce viaj\u00f3 a Canarias con <strong>Rayco Vargas<\/strong>, fundador de Varguita Cheesecake, Mejor Tarta de Queso de Canarias en 2024 y defensor de una elaboraci\u00f3n sin bases ni coberturas que resten protagonismo al ingrediente principal; su propuesta para Zamora naci\u00f3, en sus palabras, de una idea muy clara: hacer del queso el aut\u00e9ntico protagonista.<\/p>\n\n  <h2 style=\"color:#2F76A6;font-weight:800;font-size:26px;margin:38px 0 14px;\">Tres t\u00edtulos nacionales en dos d\u00edas<\/h2>\n\n  <p class=\"anim\">Con la tarta de queso se cierra el ciclo de concursos de FROMAGO 2026: <strong>Ignacio Calder\u00f3n<\/strong> (Mejor Maestro Fromelier de Espa\u00f1a), <strong>Juan David Marco<\/strong> (Mejor Tabla de Quesos en Hosteler\u00eda) y <strong>Nacho Pont\u00f3n<\/strong> (Mejor Tarta de Queso de Espa\u00f1a) forman el palmar\u00e9s de una edici\u00f3n en la que los tres cert\u00e1menes, patrocinados por INLAC, han batido su r\u00e9cord de participaci\u00f3n. Para EILZA, escuela l\u00e1ctea que los organiza, el objetivo es el mismo en los tres: dar visibilidad a los profesionales que, desde el mostrador, la sala o el obrador, hacen que el queso llegue
