Today, the San Atilano Seminary was the setting for an event that Zamora will not soon forget. Nearly 200 professionals from the cheese industry filled the auditorium to attend the master class led by Mucio Furtado, a world-renowned authority on cheese technology with 13 technical books to his credit, and Pablo Rivero of Queserías Entrepinares. Organized by the International School of Dairy Industries (EILZA), the event exceeded all expectations and once again confirmed Zamora’s leadership as the capital of cheese knowledge.

An entire sector in a single room

It is rare for a technical conference to bring together such a diverse range of participants under one roof. Delegations from Asturias, Galicia, Andalusia, the Canary Islands, and international delegations from Portugal and Argentina have shared sessions with representatives from 45 different dairy companies: major national and international groups, prestigious artisanal cheese makers, and leading cooperatives in the sector.

Diversity has not been an obstacle—it has been an asset. Advanced industrial technology and artisanal tradition have found common ground in the analysis of the major challenges of cheese production and aging, with a practical approach that has facilitated the active participation of attendees.

Beyond the technical content, the event stood out for its professional atmosphere. The coffee and catering areas served as networking hubs where executives, quality control specialists, researchers, and EILZA students strengthened ties and created new opportunities for collaboration. Another step on the road to Fromago 2026

This Master Class is not a one-off event. It is another link in the “Camino de Fromago”: the strategy through which EILZA and the Zamora Provincial Council are building, month by month, the most ambitious edition of the fair to date. Because Fromago 2026 aims not only to be Spain’s largest cheese showcase—with a route stretching over 2 kilometers and more than 1,200 varieties of cheese lining the streets of Zamora—but also to serve as the driving force behind the professionalization of an entire industry.
