The international expert, author of 13 technical books on cheese-making, is making his first stop in Zamora before giving a master class to nearly 200 industry professionals.

The tour, organized by EILZA as part of Fromago 2026, takes visitors through the historic and production facilities of one of the leading cheese dairies in Castile and León.

Events like this reinforce Fromago’s commitment to knowledge, training, and the international visibility of the Zamora cheese industry.

La Antigua Cheese Factory in Fuentesaúco hosted the first event on Mucio Furtado’s Spanish itinerary today; Furtado is one of the world’s leading experts in cheese-making technology. Accompanied by the team from the International School of Dairy Industries (EILZA) and the organizers of FROMAGO Cheese Experience 2026, Furtado toured the facilities of this iconic Castilian cheese factory during a day that combined technique, history, and product.

A visit in three acts

The day began with a tour of the facilities that will house the future Fuentesaúco Cheese Museum, where historical artifacts from traditional cheese-making are preserved: cutting boards, presses, cutting tools, and butter-making utensils that document decades of cheese-making in the province.

The group then toured the active factory: milk reception silos, the production room, and aging chambers—spaces that shape one of the most renowned production processes in the national cheese industry.

The highlight was a tasting on the terrace of the facility, overlooking the Zamoran countryside, where the product spoke for itself.

Zamora, a leader in cheese-making expertise

These types of events directly support the goal shared by FROMAGO and EILZA: to strengthen the sector’s industrial and educational infrastructure while establishing Zamora as a leading center of Spanish cheese-making expertise. Opening the doors of the province’s finest cheese factories to international experts of the caliber of Mucio Furtado is one of the most direct ways to achieve this.

The visit to La Antigua is also the first in a series of stops at cheese shops in the region that will be posted in the coming days.

Tomorrow: Master Class for 200 cheesemakers

Mucio Furtado’s schedule in Spain continues tomorrow in Zamora. The EILZA facilities at the San Atilano Seminary will host a master class on cheese defects, attended by nearly 200 cheesemakers from all over Spain, as part of a high-level technical conference organized by EILZA in the lead-up to FROMAGO 2026.
